Ingredients

Sweet potato

  • 1/2 lb sweet potato, diced small
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp sea salt

Aioli

  • 2 egg yolks
  • 1/2 lemon,juiced
  • 1 tsp Dijon
  • 1/2 tsp garlic, minced
  • 1 tsp chipotle peppers
  • 2 tbsp fresh goji berries
  • 1/2 tsp salt
  • 1/4 cup - 1/2 cup vegetable oil

Instructions

  1. Preheat oven to 400F. Roast sweet potato for 30 minutes, or until cooked through.
  2. Puree yolks, dijon, lemon, garlic, chipotle and goji berries.
  3. While still blending, slowly add vegetable oil in a steady stream until thickened.
  4. Season to taste with salt.

To serve tacos:

  • 2 cups roasted sweet potatoes
  • 1 cup chipotle goji aioli
  • 1 cup finely shredded cabbage
  • 1/4 cup shaved radishes
  • 1/4 cup fresh cilantro
  • 2 lime wedges
  • 4 warmed corn tortillas
  • Build tacos with all ingredients, drizzling with aioli and garnishes with cilantro and lime wedges to finish.
