Ingredients
Sweet potato
- 1/2 lb sweet potato, diced small
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp sea salt
Aioli
- 2 egg yolks
- 1/2 lemon,juiced
- 1 tsp Dijon
- 1/2 tsp garlic, minced
- 1 tsp chipotle peppers
- 2 tbsp fresh goji berries
- 1/2 tsp salt
- 1/4 cup - 1/2 cup vegetable oil
Instructions
- Preheat oven to 400F. Roast sweet potato for 30 minutes, or until cooked through.
- Puree yolks, dijon, lemon, garlic, chipotle and goji berries.
- While still blending, slowly add vegetable oil in a steady stream until thickened.
- Season to taste with salt.
To serve tacos:
- 2 cups roasted sweet potatoes
- 1 cup chipotle goji aioli
- 1 cup finely shredded cabbage
- 1/4 cup shaved radishes
- 1/4 cup fresh cilantro
- 2 lime wedges
- 4 warmed corn tortillas
- Build tacos with all ingredients, drizzling with aioli and garnishes with cilantro and lime wedges to finish.
