summer goji berry power saladGoji berry vinaigrette

  • 1/2 cup fresh goji berries
  • 1 tsp shallots, minced
  • 1/2 tsp garlic, minced
  • 1 tbsp honey
  • 1 tsp dijon
  • 2 tbsp apple cider vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste

Combine all ingredients except the olive oil in a food processor, or a tall container with an immersion blender. Blend ingredients for 1 minute, and slowly pour in olive oil until incorporated.

Candied walnuts

  • 2 tbsp sugar
  • 1 tbsp water
  • 1/2 cup

Heat sugar with water in a small saucepan over medium high heat. When sugar begins to bubble, add walnuts, and stir until well coated. When sugar is mostly dissolved and begins to caramelize slightly, remove walnuts from heat. Place on parchment paper to cool.


  • 1/2 cup goji vinaigrette
  • 4 cups lettuce, torn
  • 1 cup kale, chopped
  • 1/2 cup zucchini, shaved thinly
  • 1/2 cup red cabbage, shaved thinly
  • 1/4 cup radishes, shaved thinly
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup walnuts, candied

Combine all salad ingredients except the vinaigrette in a large bowl or on a large platter. Drizzle with 1/4 cup of vinaigrette and toss gently. Taste, and add more vinaigrette if desired.
